Our Spartan gourmet olives in EVOO are not as salty, or bitter and not as briney in taste as most olives. Like Yiayia prepared them, we soak them in cold water for several days to reduce the salt, bitterness and brine taste. Then we cure them for a few days in our special red wine vinegar from Greece. When ready, they are drained and poured into the jars and covered in pure extra virgin olive oil (EVOO) and topped off with a pinch of sea salt. Simply delicious and addictive.
